Step by Step Instructions
Step 1
Preheat your oven to 180 degrees Celsius. Place your ingredients on the counter so everything is easy to reach. I like using a Mixing Bowl Set from Amazon because it helps me season everything evenly but you can use any bowl you already have. Add the chicken breasts to the bowl and sprinkle paprika, oregano, salt and pepper. Pour in the olive oil and mix gently until all pieces are coated.
Step 2
Transfer the seasoned chicken to an Oven Safe Baking Dish. Place it in the oven and cook for approximately 10 minutes. The dish helps the chicken cook evenly but you can use any oven tray that you feel comfortable with.
Step 3
While the chicken cooks prepare the sauce. Add honey, Dijon mustard, whole grain mustard, chicken stock and cornflour to a clean bowl. Use a Whisk to combine everything smoothly. If you do not have a whisk you can use a spoon or any tool available in your kitchen. I only recommend this whisk because it makes mixing easier and prevents lumps.
Step 4
Remove the chicken from the oven once the first bake is done. Pour the honey mustard sauce over the chicken and coat all pieces well. Place the dish back into the oven and bake for 20 minutes or until the chicken is fully cooked through and the sauce becomes thick and glossy.
Step 5
Allow the chicken to rest for about 5 minutes before serving. This helps the juices settle and keeps the chicken tender.

Note
Use boneless chicken breasts for even cooking. Cornflour helps thicken the sauce but you can adjust the amount based on your preference. You can replace Dijon mustard with regular mustard if preferred. This recipe works well with chicken thighs too. Resting the chicken after baking gives a tender result. Pair this dish with rice, mashed potatoes or roasted vegetables.
