There are certain meals that instantly make dinner feel exciting again, and this chicken burrito bowl is one of them. It started as a simple weeknight dinner idea when I wanted something fresh, colorful, and satisfying without spending hours in the kitchen. Instead of ordering takeout, I decided to recreate that restaurant-style burrito bowl experience at home.

What makes this bowl special is the balance of flavors and textures. The juicy lime-marinated chicken is smoky and savory, the cilantro lime rice is buttery and fragrant, and the toppings add freshness and crunch. Every bite feels bright thanks to the citrus, herbs, and fresh vegetables.

Another reason this recipe quickly became a household favorite is how customizable it is. Some nights we add extra avocado, other nights we pile on spicy corn salsa or more crema. It is the kind of meal where everyone can build their own bowl exactly how they like it.

Step 1

For the cilantro lime rice, heat oil in a pot and sauté minced garlic for about 30 seconds until fragrant.

Step 5

Add the rice and lightly toast it before pouring in the water, chicken bouillon, and salt. Simmer covered for about 18 to 20 minutes until the rice is tender.

Step 6

Remove the rice from heat and stir in butter, lime juice, and fresh chopped cilantro. I like using the Cuisinart Silicone Spatula to gently fluff the rice.

Step 7

Prepare the corn salsa by mixing drained corn, diced purple onion, jalapeño, cilantro, lime juice, and salt in a bowl.

Step 8

Warm the black beans in a small pot with a pinch of cumin and salt.

Assemble the bowls by adding a generous layer of cilantro lime rice. Top with sliced chicken, black beans, corn salsa, pico de gallo, avocado or guacamole, and drizzle with crema.

Serve immediately and enjoy your homemade burrito bowl.
